Spent plenty of time going through the event log to see what if anything caused the issue with .pdf files. So far I have found nothing.

The article also talks about another strange issue that I have noticed. The "Open with issue", which also does not list other apps, just the default ones.
In some cases the option "open with" is not even available when right clicking on a file type.
My news item's been moved although this is likely to be recurring and important issue, so I won't bother posting there again.

However, it would be better (I think) to uninstall the update, and hide it (see the Tutorial section) as in the article quoted by Seoras (above)
Hmm, open with not available sometimes...
(Just for amusement (?), count how many posts this MS guy wrote before getting the point.. then threw the kitchen sink at it..

Default File Type Associations - Restore in Windows 10 - Windows 10 Forums
Each reg file therein includes 'Open With' so I suggest you pick an extension for which you have no 'Open With', merge the relevant reg file from the above, see if you have 'Open With' (might need to at least log off/on).
