@BunnyJ. Ok, so you have disabled all of your tiles from your Start Menu...which I think is great and that is exactly how I would want it 98.5% of the time.
So, show me how your start screen looks right now for those 1.5% of times when I would want to use that instead to lunch an app.

Start8 made win-8-8.1 bearable
Start10 if named will do what Microsoft does not do for it's customers,
Rid them of the dreadful Bing search default
So please don't bash what you might not fully understand,
Start8 also made it as easy as 2 clicks to change the start button to anything else very user friendly though start8's search could be a bit better
$5.00 u.s is hardly a waste of money or resources

I don't want to see all of the apps. I want to see the items that I would have had pinned to my start screen.

It can be done. However, It involves a few steps to have what you want. :
- Click on "All Apps"
- scroll and select what you want then right click->pin to start. The app will appear on the right hand side.
- click on "back"
- Click and hold then drag the app to the left and release.
- Right click on the app (tile) from the right then unpin from start.

Or, Shift/right click on an entry from the All Apps menu and choose 'Pin to Start list'.
