I did come from out of nowhere, but it has been around for some time. It was bundled with an update but it's been so long ago I can't remember which one.

It's just another Microsoft Mr Clippy moment, they've got a whole department whose job it is just to think up the next user annoyance.

Can't be removed, can't be uninstalled, just hide it.
    Right click > Hide
    or
Settings > Personalisation > Taskbar > Turn system icons on and off > Meet Now > slide to off
    or
... any other half-dozen ways to do the same.

Did you recently move to 20H2 ( 2009 ) ? That's when it first appeared:

Meet Now is a Skype feature released in January 2020, initially visible only when using the Skype app or Skype for Web. Starting with Windows 10 October 2020 Update, Microsoft decided to also roll it out to Windows 10. That’s why you see the Meet Now icon on the Windows 10 taskbar, next to your clock.

This icon can be rearranged, enabled, or hidden like all other icons from the system tray.
To turn off or on : Settings > Personalization > Taskbar > Turn system icons on or off

What is Meet Now in Windows 10?

I suspect MS felt they got left in the dust when another more famous app 'ZOOM'ed past them during the COVID lock down. This being their 'late to the party' entry for video meetings.
