I'm trying to cut down on extraneous programs that are available to our students in our school.
Does anyone have a collective list of the System Apps in Windows 10 that explains the purpose for each file?

I see what you mean now!
I am not sure if they will get re-instated when there is a Feature Update though, so that is worth looking out for!
I usually remove mine post installation with a script that I wrote for ALL users. I then run another script that provisions them so they can NOT be re-installed during a Feature Update.
I do it this way because I know that I will NOT use them, but I suppose in your situation there is always a possibility that you will need them and can therefore just re-enable them!

Not exactly a script solution, but you can follow the steps in this Msoft article to prevent apps from being reprovisioned during a semi-annual update:

Hey, just came across this post. This has been a pet hate of mine for ages. I was on 1809. That version doesn't reinstall systemapps with CUs, but M$ changed things in 1903 such that they do get reinstated. I've since upgraded to 21H2 and had to turn off windows update completely to stop them being reinstated.
Would you might sharing your strategy for how to stop them being re-installed.
