One thing I see is a confusion between a text editor and a word processor. Notepad is a text editor and doesn't handle an actual image, shows a lot of text that is the coding of the image, try File, Open, All files and choose a .jpg or .png to see that text. WordPad is a word processor [lite version of Microsoft Word] that can have an image inserted [copy and paste]. Other word processors are LibreOffice, WordPerfect, WordPro or older AmiPro, OpenOffice, SoftMaker, etc., some free some not. A text editor is used for programming where formatting coding gets in the way and for basic HTML editing.

Yes, I know but that is text only. Notepad will take out the images and I will see if my wife wants to do all of that editing.

OCR is text only. Isn't that the point?

Or save webpage as .html and you can re-open in your browser anytime.

Something else to check, see if the site or E-Mail has a choice of saving as a .pdf file, can be edited or simply Select the text and Copy then Paste into a word processor.
