Do any of the non-Adobe PDF readers allow text to be added? Can signatures or initials be added to documents?

I would've been happy to go with Adobe Reader DC, but they cut out those features I use all the time, and until I learned how to stop Adobe from constantly updating me to DC, I was always re-installing XI.
Anyway, I finally stumbled onto the fact that my PDF's would stay open only if I my WiFi was disabled. Reconnecting to WiFi did not close the open PDF file, and additional PDF's I would open stayed open as well. If I closed all my PDF's (with WiFi enabled) and then tried to open one without disconnecting, it would close. As long as I let one PDF stay open, I can open more, and they'll stay open with no problem. As long as I open a PDF after disabling WiFi, there's no problem . I'm sure there's a reason this happens, but I am not going to waste any more time trying to figure it out.

Please be aware while many are posting about alternatives to the free Adobe "Reader" version, many have no idea about the capabilities of the paid version and as such may be blindly posting on an issue they know nothing about. That said, I can't speak for those other programs since I use the paid Adobe Acrobat version (been an Acrobat user since 2000) as it provides what I need and more (and what you ask about).
As for Adobe Reader, realize that's simply a scaled down free PDF reader. If you want the features you speak of, you'll have to buy the full featured Adobe Acrobat. Again, I can't speak to those other programs as I've no need for them.
As to your original issue - did you get that solved? Also I find this interesting as I've never ever had that issue...
I've never had that happen to me in either running Acrobat XI or now running Acrobat Pro 2017. And I have the Creative Cloud app since I'm also running both Adobe Photoshop, and Lightroom. I'll get a notice of Acrobat DC, but it's never ever once auto updated me. Something doesn't sound right. In fact your entire issue just sounds odd and there aren't any such reports of it at the Adobe Acrobat forums
I have to ask... do you have an Adobe account? Is Acrobat licensed and registered?

- either disable "Adobe Acrobat Update Task" in Task Scheduler
- or install Reader 2017 as I already said, it never "upgrades" itself to DC, only does security patches.
Guess that only Reader XI goes to DC, not a Pro version.
Ya see, the word "Reader" in the header and posts from the OP - and the subsequent replies - is a dead give-away really are also talking about the "free version",. as are the alternatives suggested.
And it's the OP who changed the "rules" of the conversation from the free "Reader" version to what can be done with paid versions
