How to change default app for file type

I'm trying to change app that handles .jpg file types on my system from default "photos" to Windows Media player(just because I like better it looks:)) and despite fact that WMP is installed and handles other file types - How to change default app for file type-image.png, I still can't choose it from the windows default app list - How to change default app for file type-image.png Why is that? What do I need to change?
    Windows build is 18363.752

The basic idea is that you can relatively easily associate a given file type with any program registered to handle that file type.

    Others should not be listed.

Beyond that you can use e.g. Open with and Browse to to select a program.
However I now find that often the 'Always use' checkbox is not present when an association exists. (It is present for unassociated files).
WMP is a very curious choice here- I find it displays a jpg file for a few seconds.

'Open With > Choose another app' has three step, in the first it only offers apps registered for that file type. If you click 'More apps' it lists all registered apps regardless of suitability. Both these steps have the tick-box for 'Always use...' in my 18363.752. The third step, if needed, is 'Look for another app on this PC'. The 'Always use...' must be ticked before taking this step if you want the change to stick. However, WMP appears at the second step.

For a quick look at a JPG almost anything (including WMP) is more practical than Photos which on my system takes more than ten seconds just to open a photo. The OP is probably not aware that the Windows Photo Viewer is still available in W10, but hidden away. That's my default viewer for JPG.

Restore Windows Photo Viewer in Windows 10

And, once enabled, is available in Settings > Apps > Default apps.

@Bree - yes, I'm quite aware of this thanks, but as you will see it's missing. I recall reading that clicking the dialogue at a certain point in blank space made it appear, and trying that once successfully, but doesn't seem to help now. Plenty of other similar reports of this option being missing.

Odd. As I recall you use Classic Shell, maybe that is a factor? All my 1909 systems have the tick-box but then I don't use any shell modifiers, in that respect they are standard windows installs.

The article I cited suggests correlation with Irfanview- I just tried uninstalling it and restarting, but no change. However, the option IS there as I suggested above for unassociated file types.

Might suggest the presence of some program(s) related to this. Open Shell - only the start menu, not the explorer features.

The option IS present on my other PC with far more installed, including Open Shell.
@Bree - see your comment and poster's response here:
    cannot change file association
