Microsoft's enterprise team is no longer testing the relocate Users folder feature, so going forward you will have to put up with the risk of this not working as expected. It may work in one build...
Not sure where you heard that. The overwhelming majority are on Windows 7. Windows 10 is a distant second, and XP is third.

No, that's incorrect. If you use Group Policy, the "Give me updates for other Microsoft products when I update Windows" option can no longer be changed and will be greyed-out.
