Tested 1903 on a few spare loaner laptops that I had around the shop. Zero issues so far. Plan on making some images soon for deployment.

Windows Defender events are in your Event Viewer.
Applications and Services Logs > Microsoft > Windows > Windows Defender > Operational:
It runs a daily scan when there's no activity on your computer (i.e. at night).
