On Windows 11 it will warn you 15 mins before restarting. I don't know what happens when you cancel... I've never done that.
Generally, most of us just manually run the updates when MS releases...

No issues... just hook it up and format it.
If the SSD from the old dead PC had Windows on it, the newer computer may be confused as to which one to boot to, but other than that, you'll be fine.

I saw where you mentioned that 3rd party backup software is too complicated.
