I just installed KB5003637 also and no issues. Are you referring to the Classic Start Menu by using Classic Shell? I use that too. and no issues.
On my pc's, MoUsoCoreWorker.exe is triggered by just opening PC Settings. However it disappears after a short time after that.

Used mngerhold's solution back in March. I am on version 21H1 now and the override request is still in tact and I have never noticed any issues from doing this. If M$ ever resolves the issue then...
So far some AMD Ryzen processors seem to be causing the issue with Windows Update and the Media Tool installation seems to be the workaround.
