Just in case anyone asks a similar question - the version number of the Media Creation Tool (10.0.10586.0) gave me an ISO that installed as OS Build 10586.0 Version 1511. So the MCT version number...
I looked at the properties of the media creation tool and it has a version 10.0.10586.0 so it seems that MS is saying it will download the latest. So I'll give it a try and see what happens :).
