    See if this works:
    Dism /Online /Cleanup-Image /RestoreHealth /Source:wim:Z:\sources\install.wim:1 /limitaccess

    Really ?!

    Running a DISM /Online from a running Windows 8.1 Pro in C:\ in order to fix a Windows 10 in G:\ with original Windows 10 DVD-ROM in Z:\ ?
I am risking to screw everything in this current Windows 8.1 Pro!

There is a reason why that /Image is being involved.

Use the /RestoreHealth argument to repair the image. For example, to repair an offline image using a mounted image as a repair source, at a command prompt, type the following command:
    MD C:\mount
    Dism /Mount-Image /ImageFile:"Z:\sources\install.wim" /Index:1 /MountDir:C:\mount
    Dism /Image:G:\offline /Cleanup-Image /RestoreHealth /Source:C:\mount\windows
    Dism /Unmount-Image /MountDir:C:\mount /discard

Note: you must verify you are using the correct index from the install.wim

    Unfortunately....

Thank you for your help Kyhi.
Yes -- the index is 1 as posted above.

    Microsoft Windows [Versione 6.3.9600]
    (c) 2013 Microsoft Corporation. All Rights Reserved.
    C:\Windows\system32>MD c:\mount

-> done and the new directory appeared in C:\

Then always with Admin rights CMD:

    C:\Windows\system32>Dism /Mount-Image /ImageFile:"Z\sources\install.wim" /Index:1 /MountDir:C:\mount

Deployment Image Servicing and Management tool
    Version: 6.3.9600.19408

    Error: 3
    Cannot find the specified path.
The DISM log file is available in C:\Windows\Logs\DISM\dism.log
    C:\Windows\system32>
The DISM log file is available

Anyway I am not sure why I would need to -mount- anything when the Windows 10 DVD-ROM does not need to be mounted, as shown in the previous screenshots,

    Two things -

RestoreHealth is the option @Kyhi gave you.

    Z:\ comes before sources.

    You ran Dism /Image:G:\Offline /Cleanup-Image /ScanHealth /Source:wim:Z\sources\install.wim:1

    You should be running Dism /Image:G:\Offline /Cleanup-Image /RestoreHealth /Source:wim:Z:\sources\install.wim:1

This all just leads me to a question. Why are you trying to repair an offline windows 10 image - when you have access to all your files via the bootable windows 8 OS ??? Normally we would use WinPE to gain access to a non-bootable OS for recovery or repair...
What is so special in your windows 10 OS that can not be saved or redone ?? What is the reason for the repair, rather the a replacement ?

you could Format G:\ - then apply windows 10 Image
    Dism /Apply-Image /ImageFile:"Z:\sources\install.wim" /Index:1 /ApplyDir:G:\
and reboot into a clean install of windows 10
