I would download HD Sentinel and check the external and internal drives' health.
This is normal.
Smaller sized files will slow down the speed, especially if there are many one after another.
A larger sized file and the speed will increase.

The file sizes im trying to transfer are 1gb to 10gb videos.

Flash drives are usually not the fastest devices around mostly due to buffer constraints & the slowness of inexpensive memory. Most flash drives exhibit exactly what your seeing. Won't get any faster no matter what you do other than replace the flash drive with a fast memory drive.
That's normal when using Windows File Manager to copy files to a USB flash drive, particularly with varying file sizes. Standard USB flash drives are not very fast.
