After researching, I'm still not sure if under Security & Maintenance "automatic maintenance" setting updates just applications or if it also will install OS updates.

In short, yes.
...but not all of them, at least not major build upgrades. In the first weeks, you have to manually check for updates to get them. It wasn't always like this, and it could change in the future
Thanks Andre Ten. Just have to sure about these tricky MS updates. Think I'll be alright w/a fresh install on my new build w/ if I remember should be 1909 ver. But a few recent kb's seem to be mucked up, like w/hp printing (for some).
Hard to believe we have to put up with this in 2019, soon to be 2020.
