I am searching for a power supply that has a display on the side which tells me how much power I'm using at any given time.
If anyone can throw me some name brands or links I'd greatly appreciate it!

That's a nice PSU, Seasonic based, albeit on the high-end of price. Already spending that stimulus check, eh. LOL.
It's either that or a supercharger on a 195k engine lol
Look at the 12v rail and amps to see what it can handle. Watts means nothing
