Raspberry Pi OS (Raspbian Buster) 32 bit.
There is a Windows on Arm Windows 11 out there that will run on it. It needs a lot of work though to really be usable day to day. The legality of running it is also a bit questionable.

Pi OS is a custom port of Debian Linux. And there are other Linux distributions that will run on a Pi. Ubuntu and Retro Pi etc.

The ports of Windows on Arm that were "out there", weren't officially sanctioned by Microsoft. It was something "somebody" made work on a Raspberry Pi.

Custom extruded aluminum beam frame, 7 inch Pi Foundation touch screen (Display Serial Interface (DSI)), Raspberry Pi 3B+, GPIO breakout to extra large solderless breadboard.
I use this for trying out new stuff and testing Python code. You plug you IC's etc into the solderless breadboard and then connect it with male DuPont jumper wires.
It runs a full desktop OS and can browse the Internet, plus do things via the GPIO (General Purpose Input Output) header. I wanted something portable enough to carry from room to room. I take it out on my back deck under my gazebo in the summer to tinker with. It's 19 cm wide by 35 cm long and 24 cm high.
    SoC: Broadcom BCM2837B0 quad-core A53 (ARMv8) 64-bit @ 1.4GHz
    GPU: Broadcom Videocore-IV
    RAM: 1GB LPDDR2 SDRAM
Networking: Gigabit Ethernet (via USB channel), 2.4GHz and 5GHz 802.11b/g/n/ac Wi-Fi
Bluetooth: Bluetooth 4.2, Bluetooth Low Energy (BLE)
    Storage: Micro-SD
    GPIO: 40-pin GPIO header, populated
Ports: HDMI, 3.5mm analogue audio-video jack, 4x USB 2.0, Ethernet, Camera Serial Interface (CSI), Display Serial Interface (DSI)

I burned up all my craigslist luck for the next decade today. One, I bought a NIB 3900XT for $165. Then the lady had a steambox in her car that is Ryzen powered and Only wanted $300 for it. So I bought it. Will be a nice case/PSU for my next workstation.
