Well, as I said, first set up the PC as it comes out of the box so that you get a digital license stored on the activation severs and linked to the hardware of the new PC. After that you are free to try the old drive.
Welp, I got everything set up and it works fine for the most part. Had a few issues but nothing a few driver uninstalls and reinstalls couldn't fix.

One thing, though; under Activation with the "new" HDD (old one from old system), it says it's Windows 10 Home. What do I do now? Is it fine? Not sure how to "change" it to Pro.

Did you set up the new PC out of the box? Did it come with Pro and did it activate before you swapped the drives? If so your PC's hardware now has a digital licence to run Pro stored on the activation servers.

Your old PC had Home installed, which is why it currently says Home, it should also say it isn't activated. You can upgrade to Pro and activate from your new PC's digital licence by changing the product key to the generic key for Windows 10 Pro:

Yeah I followed everything you said, was just odd to me it still said Home. The thing you posted about the key completely fixed everything and now it says Pro. I've also verified that it's activated!

Thank you so much for all the help! It's really appreciated.
