For one realtemp you need to go back to it's folder and use realtemp GT I believe it is and all 6 cores will show :)

Indeed took a while when I used realtemp that the GT version reads all 6 core on my 5930k :)
Doesn't read 7900x's 10 cores so I switched to coretemp instead which does read them all.
I don't think you'll find any differences in usage the vid's will vary and not really sure either are vary accurate
I'd refer to hwinfo64 free for voltages....

Pretty much why a lot of people use by spastic core instead of all core so one can adjust/ lower the voltages of the hotter cores freaking silicon lottery in all not all cpu's are created equal :/

I can always switch coolers i bought the water3.0 because i couldn't get my hands on the Ring360 basically the same but i do have a brand spanking new H115 that i got from a RMA and a H110 i just took off the 8700k

Innovation has been hit and miss Intel wise
Seems they are re-releasing old chips and increasing voltages and calling them new although the socket is the only new part
Cooling wise I have a boat load of dough in both systems now lol
