I updated the driver for the monitor, G-Sync is set for Windowed and Full-screen mode but I still don't see the option other than 60 Hz. I also read that this feature may only be viable with a GTX 1080Ti and I have a GTX 1080.
False i had one 1080 that it ran at 100 fps one regular 1080 can run overwatch on epic at 160+frames dual 200+ one 1080ti 180+ there is no reason why it isn't working unless you have a crappy Display port cord the one Asus provided is the one i am using so ....

You also tried monitor controls right ?

Also i'm going to say only HDMI is locked on 60hrz you are positive you are using the right cable

    #1 HDMI
    #2 Display Port
    #3 USB

The Hdmi and Display look the same but the ends are slightly different i am saying this as that could be the wrong cable mistaken for the other
