Depends on the quality of the cables.

However, the quality of the cable determines the amount of shielding provided.

Signal Interference and Cable Shielding | Multi/Cable Corporation

When I was working as a CATV tech in the 80's, there were coax installations in houses so bad that I could hook up my meter to them, turn the audio on, tune to the airport radio frequencies and receive aircraft communications.

I've seen coax cable with even worse shielding than this:

Appreciate the response. So my coax cable is provided by spectrum and the ethernet cat6 cable I bought from ebay.

Let me know what you think.

The coax will be fine since it was provided by a real communications company. There is such a wide range of cable quality on ebay, it's hard to say. Most the cheap CAT6 cable on ebay that will not work is stranded wires. So, chances are that as long as the cable looks like it is truly CAT6 carrying some kind of certification and it has solid copper wires, it will be OK. You won't have to be concerned about interference into or out of the coax, so your concern now is the quality of the CAT6 cable picking up interreference from sources other than the coax.

Are you going to be installing the connectors on the ends of the cables yourself?

No the cable comes with connectors already. No need to splice or install those.
