    should i buy a
    Nighthawk Pro Gaming XR300

    or

    XR500 Gaming Router

does it really lower ping and make a difference? what exactly lowers your ping? sometimes i see peoples speedtest speeds showing "1 ping"

You need to look at Router Charts - WAN to LAN Throughput - TCP as for the short answer. Anything between you and the endpoint can cause longer ping times due to traffic. Gaming servers tend to be ran by private individuals and overloaded.

If your worried about gaming latency, don't use WiFI, try and connect with ethernet instead. You will always get better pings.

The CM1000 and Arris SB8200 have the same chipset, which is the Broadcom series. Go with what you can afford, what you expect for cost return (You expect to spend and not planning on replacing immediately), along with how well is the WIFI signal coverage for 2.4/5ghz, especially 5ghz range, without having to place just a WIFI AP somewhere or start using MESH adapters. The Engenius AP’’s are worth it if you need to extend coverage for WIFI.

Coax vs. fiber determines the latency the first few miles. Coax is not yet ready to go that low.
