Go to the Program Files folder containing Office (in my case Office 2010). Locate the applications for Word and Excel (example is Excel). R-click Send to Desktop shortcut
R-click Desktop shortcut, click Pin to taskbar and move into desired position.
I Unlock the Taskbar, Pin programs then drag them around to how I want them displayed. It has become a bit different in Win10 [maybe in Win8/8.1, can't remember] but perseverance works.

This morning I suddenly realised that some of my taskbar icons had moved over to the left...
Normally I only have the Windows start icon on the left then the usual show hidden icons/speaker/network/...
Apparently a registry tweak is needed to have Windows 10 remove unwanted list of docs (when right-clicking on Word/Excel icons on taskbar).
Just haven't found the tweak yet and afaik, the guy at Microsoft forums who posted such as response is...
