Now I have the problem where Outlook stopped sending and receiving messages (sometime in the middle of the night!) and I cannot force Outlook to log out (disengage) from gmail. I figure if I can just logout of Gmail and then log back in, it might clear things up. But nothing I do will accomplish this simple task. Logging out of Gmail using the web client doesn't, Restarting the PC doesn't I can't create a new profile because I can't login. This is so ridiculous. I'm going to try to get rid of 2-step login and see if an app password will work. It didn't before.
You can force Outlook to ask for a password by Password protecting the PST in Outlook via the MAIL applet in control panel.
That's what I'm doing now, but it's not the same as forcing it to logout of Gmail. I want to force a logout after a set number of minutes of inactivity and I'm not sure Outlook can do that, as it periodically checks for new messages on the server. Making any of these changes on the Gmail web client has no effect in Outlook.
