Why saving to File System Data Loss riskier than OneDrive/SharePoint

Why automating Attachment (when Email arrives) saving to File System (non-Web technology) incur more risk than saving to Web technologies like OneDrive or SharePoint?
Please correct me if wrong, security risk is higher for Web technologies.
I am not sending a file out.
My environment is Windows 10 Enterprise and Microsoft Outlook 365 Business. DLP policy is preventing Power Automate Flow for Outlook 365 Business.

Your question is meaningless without proper context.

I can't speak to OneDrive, but in my former IT life working with multiple content management systems, I can tell you that maintaining, installing, administering, and securing SharePoint Server onsite takes a substantial amount of knowledge and resources.

If I'm reading your question correctly, somebody in your organization has decided to leave that headache to Microsoft by subscribing to Office 365/SharePoint in the cloud. You'll have to talk to them as to their reasons why.
