All default fonts have changed to "Aptos"?

I find it incredibly furstrating that Microsoft just "decides" that all my Office apps should now default to this new font.

So ive changed the default fonts on all my apps back to my original preference but im still receiving emails in this new font.

How do I change the defaul font of incoming emails/how I view them in Outlook?

That 'new' font was announced some months ago.
Meet Microsoft Office’s new default font: Aptos - The Verge
Microsoft is replacing its Calibri default font with Aptos, a new sans-serif typeface that’s inspired by mid-20th-century Swiss typography. Previously known as Bierstadt, Aptos has been part of Microsoft’s hunt for its new default font over the past couple of years. The software giant commissioned five new custom fonts for Office in 2021, and the Aptos font was picked as the default after years of feedback.
I have it on my new Notebook that came with and is listed in Office 365. It is not listed in Control Panel, Fonts nor in Notepad.

MS has been doing a very slow roll on this, as my desktop installed instances of M365 apps just switched over last week. So yeah, it is "new" to some people who don't spend all day reading inane MS design articles. I wholeheartedly agree with kwitel's sentiment/frustration with MS just deciding to change the defaults on existing, installed app configs. And what's worse, it's not easy nor consistent in how to change the defaults. Per MS own documentation, as of now, there is one method for Word (easy to set default Font/Theme via the ribbon), another for Excel (no easy way to set default via ribbon as there is no set default button, you have to save a new default startup book template, once you define the path), and with Outlook the MS docs still say to use the Stationary settings in Options despite there are also being Font/Theme settings in the ribbon, with no clarity on how they interplay. And yeah, even after all those changes, my Outlook is still using Aptos for the default display font for incoming message that don't specify a font!

So yeah, kwitel's question remains: How does one change the default font of incoming emails? To be clear, these would be message that don't explicitly specify a font and Outlook is just using Aptos when it previously used Calibri. Where is THAT setting?

Just checked and my Win11 Fonts doesn't show the Aptos Font and not in Notepad, WordPad or LibreOffice Writer but Microsoft 365 does have it.
