I did select the folder in file explorer. Also, I needed a few reboots before I could delete all the files. That was not a good sign...

I know that you can't revert back to the previous Windows (because you deleted Windows.old) but do you have any restore points available that are dated before you deleted the folder?
If there are no restore points then have you any 'Full' (not differential or incremental) OS images that you can restore from by booting from USB stick?
Afterall, it was a rights issue. I used this guide to manually uninstall Office to make sure that anything left over from the previous install was really gone. During the process I came along a few folders that needed a change in ownership and/or rights. When all files, folders and registry keys were gone, I was able to install Office the normal way.
Happy me, saved me a reinstallation and a couple of days fine tuning my machine!
