Why is Office 2019 taking much of time to get installed?
I observed that Office 2019 is taking much of time to get installed. Sometimes, it takes more than 2 hours to get installed. The documents in the net are not helpful
I've not experienced that. In most cases, I've been fully installed within 10 minutes.

are you installing from an initial .img or .iso file or via the web.
If Via the web then there's probably more reasons than there are number of stars in the observable universe.
Most people can usually install this product (apart from the bonkers way of setting up email accounts in outlook 2019) - even with Project and Visio in around 15 mins (max) as @pparks1 says and that's assuming not everybody has 10GB/s internet !!! --well Iceland does have SOME advantages !!! and having big SSD's and dual / quad i7 or better processors also helps too- but should install decently on bog standard consumer grade equipment..
Most people I know haven't had any significant problems installing Office 2019 -- can't say about Office/365 as I don't use it.

Your screen shot is exactly where I'm at today. A RE-install hangs at 2%. (I was at V.2004 build 12730.20250.)
Why am I re-installing Office 2019 for the 4th time? Because that's the only way to repair it and get the latest version.
What's wrong with the update process? The last 4 have failed; first with some invalid .DLL message. Now with the "outlook (or winword).exe. The application was unable to start correctly (0xc0000142). Click OK to close". Which then sends you back to base camp to start the climb all over.
The repair tools in SARA do nothing, or produce information that is way over my skill set. The solution for the past 3 times has been to uninstall and re-install. Except for today.
To aggravate further, the Office option toggle to "Do Not Update" does not work.
This is not an elderly machine (in service since 12/2019) loaded with a ton of programs. So right now, I'm dead on the side of the road. Beware the latest Office 2019 update.

After 12 hours of intermittent fiddling with the computer... the latest version got installed. (V.2004 build 12730.20270).
First, you didn't mention if you were doing a first time initial install, or if it was a Office update.
Basically what happened was I had tried one or 2 SARA uninstalls, 'till it was announced there was nothing to uninstall. I was then prompted if I wished to Install Office. That got me the Installer icon on the desktop. It's an. EXE titled Setup.Def.en-US_HomeBusiness2019Retail blah blahPlatform_def.exe. It has an orange window frame icon.
Run that and when it freezes at the 2% mark, let it sit for awhile. I hard exited several times, ran SFC (which corrected errors) and started over. Lunch break and later dinner break. Finally, for one last time I tried again. This time, it ran for just a minute and announced a successful install. So all the previous efforts (after the first uninstall) were doing partial downloads.
The progress bar that you show in your initial image is still janky. So is the 2% percent complete window in the lower right of your screen shot.
I gave my first attempt at re-install at least an hour, probably more. So maybe a very long wait time is in order.
I find this completely unacceptable. I am very leery of any MS update these days. I wouldn't be surprised if Redmond is nearly deserted these days, and most coders are trying to work from home, with shaky supervision, coordination and direction. The kind that is easier in an office situation. As a result, we get these weeble-wobbley W10 patches and Office updates.
And the fact that at least on my machine you CANNOT disable Office updates and the normal updating process ALWAYS fails and requires an uninstall and reinstall puts my ongoing relationship with MS Office on very tenuous ground.
