Can't Set Default Bullet in Word.. Smdh

Is there a way to set default bullets in Word? I'm using Word 2019. It was suggested that I use the Styles task pane to set a default bullet. I did this and clicked on 'new documents based on this template' to set this default. But it doesnt work. Why the hell cant someone simply set a stupid default bullet of his choosing??

    I have Office 2013.

In there, I can see the "Set As Default" button for multiple options.

Referring to my attached image: I pressed the icon inside that blue box. That icon opens the options for Paragraph. Yet in this version of Word, I don't see the ability to change the bullets to have a default version. But this is the old Word 2013. See if you can find some similar location like in my attached image.
