It IS convoluted but here's the screenshots from using the control panel. It's in icelandic but same positons on English menus should appear.
You need the modify / change account and choose manual setup as shown. The modify is the one with the little hammer in the icon.
Although it says in the control panel 2016 it's the same for outlook 2019 (thanks Ms for confusing everybody !!!!).

I was in the same situation as SWEC. This does not solve the problem. "Your name" here helps define what name the receiver will get and account name is only for personal purpose.

Dear Bro67, I agree with the other member that you are quite condescending in your answers when you did not even understand the initial problem. Your answer has been irrelevant to OP's request (I was running through the same problem). He proved to be savvy and knowing what he was asking. It was quite clear. Trouble is that you did not undestand our trouble. But he did find the solution and I am thankful for that.

I just did and it worked find.
I just don't understand what went wrong with Microsoft on that part. This is so silly.
I need to mention that this problem does not appear on Outlook for Mac or any other mail client I have used so far. I had tried to use login@emailaddress.com without success too.
I hope an update will fix this. At least your solution will become hand to the handful of people in our situation.

This would not have solved the problem neither.
He asked the question for Outlook 2019. The one that you buy with Microsoft Office.
Your solution refers to the mail client that comes with Windows 10. It does have the solution and it has been my solution so far. The thing is that Outlook is a way more complete and efficient mail client for power user (especially now that I work from home). Yet, this very basic option to was not there.
Hopefully Microsoft is reading this and should fix it and bring back to option to add a login that is different from the email address without having to go through this hidden workaround.
No, sorry, the only one who is lost is you. 6 posts after you still didn't get the question. If you're told once that you didn't get it, re-evaluate yourself instead of saying rude stuff like "the OP is lost on how this works".

To those wondering if this really works or not, yes it does, so long as you add the account to the right profile. Start the control panel widget from a run window (WIN+R) by using this (include double quotes):
"%programfiles(x86)%\Microsoft Office\root\Office16\mlcfg32.cpl"
then check on your profiles. If you have multiple, holdSHIFTdown when starting Outlook and it will prompt for which profile to go with.

Thank you, goodness knows why they make these things so awkward, why not just add yet another "Advanced" button somewhere. Also annoying that the "validate config" step isn't skippable but okay, I guess I'm super-niche with the setup there and just worked around it.
Shame we have to read through two pages of bro67's attitude constantly insisting they know best while they clearly miss the entire point, over and over and over again.
Here we are two years later, and I just spent literally *hours* battling exactly this issue in Microsoft's (still) poverty-stricken Outlook account setup in Outlook / Office 2019. Until I found this thread, and the "trick" of using the "Mail (Microsoft Outlook)" app in Control Panel to solve it. So THANK YOU to those who came through, please know that your posts are STILL helping people. At least, anyone willing to wade through the initial exchange on this thread, in which Bro67 derided the OP (and, by extension, me) with the condescending unhelpfulness.
Swec and Jimbo, I joined this forum today JUST so I could post my appreciation for taking the time to be truly helpful. Now that I'm here, I'll try to contribute at least as much as I've gained, though it'll be a challenge.

your method actually is easier than the applet since the applet then tries to go into the dreaded "auto mode" -- after the latest office / outlook 2019 update. It then will eventually drop back into the rest of the manual thing but that's likely to confuse people.
Also @swec -- control panel will / is getting deprecated so your method should be "the recommended one"
Why Ms makes it a bind to set up email accounts -- goodness knows -- I suppose it's in these big organisations -- why use 1 person for a simple task (or what should be) when we can use 97. which then justifies us having 45 line managers !!

Outlook 2019/365 IS the problem. It is simply not acceptable that in an email client, that is supposed to be for professional use and which you have to pay for, the normal account configuration interface does not let:
1) to specify a different username (not alias, username, i.e. usual friend of Ms. password...) other that the email address itself (that is only one - even if the most common used by the email service resellers - of the infinite possible strings that one may choose as username);
2) to create two accounts, one IMAP and one POP3, belonging to the same email address (yes, sometimes it is useful to have the two protocols together in the same moment in the same client, for example when you need to collect the messages sent via webmail or any IMAP client into your local POP3 account);
3) to specify the various common options such as the port numbers, or even specify your name and surname! You have to create the account (if you are so lucky that you can, having the username = email address...) and then you mus re-open the proprieties of the account to apply the needed changes.
I thought I was in a nightmare the first time I simply had to add an university email account in Outlook 365 (for which the University is paying licenses), since the mail servers in the university world are usually managed by the Universities themselves, using the same username for many different services, not only for email. I'm shocked that in 2021 the problem is still there and that someone could say that it's a feature.
