Is it possible to get an iso with the latest office updates in it?

be careful with VL (Corporate volume licence) stuff though because it converts to Click2run with these latest windows release updates.
No problem if you have legitimate license but all those who use "those dubious auto KMS thingeys etc" will find finally Microsoft has got a grip on Office piracy (not before time in my view !!).
Ms wants to switch all VL users to Click2run -- not a bad thing in my view --will probably remove licensing from the client side to Ms servers. Should cut down on rogue / pirate copies out there.

I own a licensed copy of home and business 2016. Just that everytime I format my PC I need to download a large amount of update/data. So if I can somehow get an update image it will help :)

before re-formatting PC why not simply image copy the OS Disk (Macrium Free or equivalent). Then restore image is simple / easy etc and you haven't lost your updates.

Microsoft don't appear to update Office ISO's like they do Windows ISO's. My Visual Studio Enterprise Subscription shows a release date of 9/23/2015 for Office Professional Plus 2016. Thats the most current ISO I can get via that subscription. Same deal for me on a clean install of office, many updates to apply to get current again. And my install gets switched to click to run in the process. I'm hoping to score Office 2019 before my subscription runs out. My product keys are Retail not VL.
Microsoft would need to be exceptionally circumspect: Inadvertently messing with a genuine VL could trigger catastrophic consequences - I think they'll take the smart route, as usual, and leave well enough alone
