Of course it depends on the make/model of the laptop. My old laptops were easy, remove between two to four screws on a panel on the backside, pop off that one panel, two more screws, and the hard drive pops out.
On my new ASUS laptop - OMG. There are about 12 screws on the bottom. Then flip it over and pop off the entire topside keyboard, palmrest, and touchpad using a little guitar pick like tool all around the outside of it. Had to disconnect 4 ribbon cables, then two screws on the #1 hard drive. It wouldn't budge. Oh- because they glued it down to the base. OK, carefully pry it up to break the glue, now it comes out.
To upgrade anything else - RAM, network card, and second hard drive I had to remove the motherboard and fan assembly. I broke a tiny little piece of plastic - one of the "latches" that the keyboard top assembly popped into. It didn't really affect anything, but I have a little OCD and wanted to cry because I broke my "perfect" laptop. I didn't upgrade the second hard drive, but did upgrade the RAM and network card.
So, it can be an involved job on the newer laptops that the manufacturers have made less user friendly.
If you don't want the job of doing the upgrade, I would put the main OS on the 500GB HDD, and use the second 20GB HDD as a custom recovery drive - store the Windows 10 installation files there on a bootable FAT32 partition.
