My laptop CPU is Intel Core i7 6500 and it appears it doesn't meet the minimum requirements to run Win11.
I'm quite surprised by this and I'm wondering if this is likely to change in the future.
Any advice would be appreciated thanks.

Will it be added in future? Unlikely but only Microsoft can answer that.
I see no reason why this would change. Windows 11 has been out quite a while now so I don't think that Microsoft will make the requirements any less strict.
However, that said, there are simple methods to bypass the Windows 11 requirements and install Windows 11 on what is technically unsupported hardware. There are many users who run on hardware MUCH older than what you have with zero problems.

@Andy Kay, Win 11 has some hardware requirements and also require that you login using a M$ account.
For both (hardware requirements and M$ account) you use workarounds to easily bypass them.
I'm not a big fan of Rufus, but it has a tool to bypass all the requirements.

ignore the last three digits of the number, the remaining digits at the beginning are the 'processor generation indicator', in your case a '6' indicating an Intel 6th generation CPU.

We have to educate these r-tarded whipper snappers. One reason why I have to go to gym, to put noobs in their place.
In this case we need to literally, I mean literally hold community meetings or something in a highschools before they go to highschool, and educate them as consumers. That is where the stupid starts with this OS crap. I mean hell, just hell use whatever
windows 10 setup and if the program is unable to run just go find that one person you know that knows computers and ask
them if they could do something about it.
