Totally agree. Performance increases between MBR and GPT are myths. If there is any performance increase it's in the order of fractions of seconds. Hopefully @AddRAM forgives me for quoting this time
OK, so no performance bennie going from MBR to GPT.
I didn't mention that what started the need for this project is that I had <40GB remaining on my boot drive. Somehow, and I don't know why, my Windows 10 partition filled up. I did all the cleanup routines, but I never reclaimed much. And then oddly, somewhere along the early hours of this project, my remaining space went from about 8% to almost 50% ! Something major got deleted somewhere along the way and I have no clue as to what because all my apps run just as they did. I figured that eventually it would become clear what got deleted, but it never did. Anyway, by that point I was committed to go forward.

@AddRAM - You convinced me (I'm so easy sometimes). Since I don't have a TPM module on my MB, I used Rufus 3.17 to create the bootable Win11 USB flash drive. From what I've read there are no disadvantages to using Rufus. Comments?
Installing Windows 11 on unsupported hardware means you take the risk that they may stop providing updates anytime in the future.
Well here I am, posting from my brand new fresh Windows 11 system on my new NVMe disk. Surprisingly easy. Of course I'm keeping my legacy system until I get setup on Win11. How I did it:
1. Using Media Creation Tool, the Rufus 3.17 version, I made a Windows 11 boot on a USB flash drive.
2. Powered off.
3. Disconnected all drives except my 2 NVMe disks (I forgot about my rear USB drive but no issues surfaced).
4. Powered up into BIOS.
5. Disabled CSM. Fast Boot was already disabled.
6. Reboot > F8 to get boot menu > there were 2 UEFI options that were identical, just chose the first.
7. Chose "Custom" install in Windows setup. Deleted all 2TB disk partitions.
8. Removed USB boot drive on first reboot.
9. Followed the Windows 11 prompts but disconnected ethernet to avoid Microsoft account login. Reconnected later.
And that was it. Now I'm setting up Windows 11 to my liking, installing critical apps.

Yep. But with all the different advice I decided a fresh install seemed like the best option to ensure that whatever "crap" was on my legacy system that has been causing issues, all that would be gone. And since it seemed I was out of storage and then suddenly I wasn't, the need to put my legacy system on a larger disk was moot. Anyway, yeah you guys were very helpful and I thank you again for all that I've learned. It wasn't a waste. I couldn't have done the Win11 install without your and others' help.
Great job. Now you can uninstall any W11 apps you don`t want, start going through settings and get everything to your liking.
Install your programs, customize W11, then make your image.

Yep. I've been exploring all over Win11. Right-clicking on anything and everything. Missing a few Win10 favorites and finding a bunch of new interface items that are pretty cool. But I want that Taskbar on the left (for my 32" widescreen monitor)!
Moving the icons to the left is a simple one in Settings.
There are some changes made to W11 that you may not like. For example, with W11 you will see there is a new right click menu.
Everything is still there, it`s just laid out differently.
If you don`t like it, there`s a simple tutorial to get it back to the way it is in W10. I don`t like it so I changed it.
The top of Windows explorer is different too. Etc, Etc...
