I did tried Windows 11 but maybe I don't like it

    If you download the MCT instead, then use that to make an ISO it will have an install.esd. At 4.16GB it should fit on a single-layer DVD.

    Yes, definitely should not risk using W10 yet.
    MS list 5 known issues for W10 v21H1, that's only one less than the list for W11.
