If it was me I would go down the macrium method I posted
Start again with the Macrium image on an external drive connected usb
Providing the old drive on its own - boot and loads windows
I feel certain you will then be sorted

If I was going to do the Macrium way you are describing, I would need two USB drives? One to put the image of the old M.2 drive and one to put the bootable Macrium on?

If as I said the old M2 drive when that is the only M2 in the system, boots and loads windows
Then install Macrium Reflect and make an image of the drive - not a clone - on an external drive connected usb
and on a usb flash pen make the macrium rescue media

When you have the image - on the external drive
take out the original M2 - put in the new M2
boot the computer from the usb rescue media with the external drive connected
restore the image to the new M2.
Make sure that is now booting into windows and once you know it is, go to UEFI setup and make sure there is no reference to anything except the ONE M2 drive - the new one.
It maybe necessary to reset firmware to optimized defaults, but I would not expect it to be so.
PROVIDING a full shutdown and not the usual hybrid shutdown of 10 is made.

Then when you know that is OK you can then clean the old M2 with diskpart - or at least you should be able to do so, as once you have the system booting from the new M2 on its own, the addition of the old M2 into the adapter should not
    reconfigure the boot
OR as I said you can connect the old M2 boot it from the rescue environment of Macrium and diskpart it from there.

Ok, so I used Macrium to make the image and put it on the new M.2 and everything was booting just off the new M.2 fine.

But when I plugged in the old M.2 it booted to the old one and I got the collision warning again. So I just booted from the Macrium rescue and diskparted the old drive and everything is working fine now.

    Thanks for all the help!

    Cheers
Pleased to have helped a little with the image suggestion.
I can only think that in the UEFI firmware the adapter takes precedence on the boot configuration over and above the M2 slot
