    Win 10 install

I've just finished or close to finishing a new build for MSFS2020.
Watching a few YouTube videos, they suggest that you disconnect the internet before proceding too far
to stop all the unneccesary files MS can download.
So, my question is, when I complete my install of the OS, plug the internet back in, and proceed to DLing
MSFS 2020, will that cause any problem with MS since I skipped adding all of those files?

Main thing is to only have 1 drive installed during install or windows may put boot files on the wrong drive.
You need the internet to sign in with a MS account and activate and it may find it needs updates and drivers it doesnt have

Generally, I leave the internet unhooked during Windows 10 install.
This allows you to install motherboard and vid card drivers, without MS interfering.

As Samuria has said, also unhook all other drive BUT the one you are installing Windows on.

When the install is finished, install the motherboard drivers, the vid card driver.
Then reconnect the internet and do the Windows updates.

Then it would be a good time to make a backup, with backup software like Macrium Reflect (free).

Then it's time to start with things like MSFS etc.

To answer your question, probably no. If any additional features are required, a properly written program should prompt you that certain addons are required and offer to download and install them as part of the installation process of whatever program.

However, requirements of various programs arre only as good as they arre written, and can vary greatly.

The main reason for disconnecting the internet during Win 10 installation is to limit the bells-and-whistles bloatware that Microsoft thinks everyone needs by default. They are mainly associated with Microsoft options, not Windows as an OS.
