Installing new OS on new drive

Im going to be installing a new motherboard with new Internal Solid State M.2 drive which im going to install the OS on.

Currently Win10 is on Local Disk C Drive on a Sata HD.

Ill disconnect this drive first then install the OS on the new drive and im presuming this will create a new 'C Drive to install it on.

What happens when i plug the old Sata drive back(as i want to then format and use as storage, but dont want to wipe it until im back up and running on the new drive)
Will it give me 2 options on boot up or will one prioritise over the other?

Yes it will make a c drive and you can plug the old drive in and format

It will still boot from your SSD, and will see the old drive as a secondary drive, like D: or E:

Drive letters are assigned by the OS you're booting from.
If you boot from the SSD, the windows partition on that drive will be C: and the Windows partition on the M.2 drive will be something else.
