Open Device Manager and expand all entries.

Look for anything with an icon next to it.

If you find any, right-click on the device(s) and update the driver.
No such thing when op is trying to install Windows on a Linux PC.

Image the drive, uninstall Mint, install Windows.

The problem is that I can't even get Windows installed. The installer is asking for a driver and rejecting any that I can come up with.

How would this help? Windows should install independently of Linux being installed.

Apparently it doesn't in this case.

UEFI is updated to latest and the latest drivers downloaded from the ASROCK site - and no change in the install process. The installer either doesn't recognize the drivers or it throws the error "no new drivers found".

A rough guess here, but I think your motherboard probably has an AMD raid controller built in and the Windows installer is looking for a suitable driver, it would be very unusual to find an Intel controller along with an AMD one on the same board, however the AMD raid drivers need loading in a very specific order, there are 3 parts to the setup. If I am correct you would need to check AMD's website and/ or their forums for information on how to install the drivers.
Is there any option in the BIOS to disable any raid controllers?
Another idea would be that you need the Intel client driver for the 660p, you can get it from Intel's driver page, think the latest version is 5.xxxxx, although the 660p is natively supported by Windows built in NVME drivers and shouldn't require the Intel driver to work.

@Pejole2165 The sata mode is set to AHCI, though raid is an option. I'll give the raid driver a try anyway.

Aaaaaand still no go with either the 660p client driver or the AMD raid driver.
    Thank you for the idea.

    Try changing SATA to IDE.

    IDE is not an option.
