So I have an i7 3930K 🇨🇺 which is not supported. Motherboard is ASUS P9X79WS which has TPM and LGA 2011 socket, what would be a good replacement CPU

Socket 2011 CPUs: LGA 2011 - Wikipedia
The Haswell-E and Broadwell-E CPUs are LGA 2011-3, and seem to require the X99 chipset.
None of the LGA 2011 CPUs are on the supported list. The latest CPU you could use is an "Ivy Bridge", from 2013.
Welcome to the ranks of those with fairly high-end systems that (at this time) are listed as unsupported by Win 11 because of the CPU.
I'm unsure as to whether you can install Dev builds, but it may be possible. Probably not the release version, without resorting to hacks. You may as well keep the I7-3930K.
That's odd. I'm running 11 on 6th gen Intel. Check secure boot is enabled.
