If I upgrade to Windows 10 Pro from the "settings" menu from Windows 10 home, does the update process remove all my installed software, or does it just install like a Windows Update installing new features without changing my software/settings etc?
Any advice welcome?
It just changes the key and adds those Microsoft programs that are not available in your current version. If it is an Enterprise edition, then yes you would have to do a clean install.

I can switch from Enterprise to Pro via change product key. My Enterprise install is activated with a digital license though, not KMS.
Keep in mind, once you go up from Home, you can't go back down to Home without doing a clean install. Home to Pro is a one way street. Change product key will not let you go to Home from any other edition.
