I've tried many times over the course of two weeks and I keep getting the same errors. From the research that I have done, it seems that it may be video driver related. I updated to the latest Nvidia drivers and it didn't work.
And- ah- have you contacted MS support as suggested and what did they say?
And have you researched the error code?
E.g.
error code 0x8007002 and 0x8007003 - Microsoft Community

What are you upgrading from?
Which Windows build are you using?
This can be really important, and most people don't mention it or include it in their specs.
Windows key + R, winver
How are you upgrading - via Windows Update or using a downloaded iso for example?
Have you tried upgrading
a. without accepting updates
b. having disabled or uninstalled any security programs you have
c. having disconnected any unnecessary peripherals?
How much free space do you have on C: ?

I am upgrading from version 1803 Build 17134.472
I am attempting to upgraded using the Windows 10 Update Assistant from Microsoft. I would normally do a clean install from an iso but I am currently trying to just upgrade to 1809 for the October update.
a. I can't seem to upgrade without accepting updates
b. I have also tried disabling security programs (I use malwarebyes)
c. I only have the necessary peripherals connected. Should I try disconnecting everything?
I currently have 45GB free on C:

And of course, you can simply disconnect your internet..! I did both when I did my 1809 upgrade (from 1709).

The bugcheck 0x80070003 is often due to problems with drivers.
There was only a result code.
There was no extend code.
In addition to dalchina's comments above:Code:0x80070003- 0x20007 This is a failure during SafeOS phase driver installation. Verify device drivers on the computer, and analyze log files to determine the problem driver.

If you are planning to clean install then that is the quickest method to upgrade to 1809 and you will need a bootable Windows 10 iso.
If you are planning to troubleshoot the failure to upgrade then you will also need a bootable Windows 10 iso.
Find a flash drive that you can format (> or = 8 GB)
Create a bootable Windows 10 iso:

Thank you for all the help guys. I attempted to upgrade after disabling the firewall, closing malwarebytes and disconnecting the internet and the exact same error occurred.
zbook, I will attempt that right away. I think that it may be a driver issue too. I downloaded and installed everything, searched for all those cases and found nothing for all of them,
1) Use everything to search for: C:\Windows\Panther
2) Make a backup image using Macrium:
Macrium Software | Your Image is Everything
3) Save the image to another drive or to the cloud.
4) List all antivirus / firewall software (always on and manual) that were installed or in use since the last successful upgrade.
5) List any drive encryption software that were installed or in use since the last successful upgrade.
6) Open administrative command prompt and type or copy and paste:
7) sfc /scannow
8) dism /online /cleanup-image /restorehealth
9) chkdsk /scan
10) When these have completed > right click on the top bar or title bar of the administrative command prompt box > left click on edit then select all > right click on the top bar again > left click on edit then copy > paste into the thread
11) Uninstall Malwarebytes using the applicable uninstall tool:
