Most of us do not have access to an academic iso. To compare iso files the best option is to download an iso from the Microsoft website to the desktop then open the files and perform a side by side comparison.

The iso on the Microsoft website is now 1809.

For older iso they are available on third party websites.
There are iso for different versions of Windows for example servers, or enterprise, etc.

This is a link for information about iso files:

Academic versions are variant of Enterprise versions. You can have Educational or Educational Pro. Some Windows 10 features can be disabled or are added.

The academic version could be a custom image with some group policies enabled and or other restrictions backed in. May also have custom drivers included. Maybe even school or institution branding in it. Sideloaded Apps maybe. I'm talking about ISO's supplied by the school or institution.
Hard to say really what is changed and or different from a stock Microsoft ISO.
I can install the Education Edition with my Microsoft My Visual Studio Consumer and Business ISO's. I do beleiev its an option with the Media Creation tool ISO too? I haven't used the MCT ISO for a while.

The only place I find access to Academic ISOs is at the bottom of the Download Windows 10 page, to wit:

I don't see an Academic option when I elect to create an ISO using the MCT, though. Am I missing something?

I do believe the MCT is geared to Consumers, not schools etc. I guess we need to define "academic products".
Education and Pro Workstation can be clean installed with the MCT, according to this tutorial. https://www.tenforums.com/tutorials/1950-clean-install-windows-10-a.html
If you need Enterprise you may need a different ISO, though. I have yet to see Education Pro listed on any of my ISO's, even my Visual studio ones. Enterprise is listed though on those ISO's.
When I think of Academic ISO's I think in reference to one a school or organization would use or hand out.
What you get via BizSpark etc is likely the same as you get via a My Visual Studio Subscription download, my best guess anyway. I don't have access to BizSpark etc. Only visual Studio and MCT.

Pro and Enterprise are bundled, since a couple of years (or more). You can change one with entering correct activation key. Hope this is still valid, it was some time ago, when I've tested this.

Enterprise is for larger companies (and Education is large organization...), so you can add, or limit some functions. Like i.e.:
Options available to manage Windows 10 tips and "fun facts" and Microsoft Store suggestions

Windows 10 edition Disable Show Microsoft apps only Show Microsoft and popular third-party apps
Windows 10 Pro No Yes Yes (default)
Windows 10 Enterprise Yes Yes Yes (default)
Windows 10 Pro Education Yes (default) Yes No (setting cannot be changed)
Windows 10 Education Yes (default) Yes No (setting cannot be changed)

@AndreTen Enterprise used to be its own ISO, Education too I think at one point. It's all in the latest Business ISO. At least as far as Visual Studio Subscriptions go. BizSpark may be different I don't know? One exception is Enterprise LTSB, its a separate ISO. I've run Enterprise and Education here at home. You can limit Pro the same way you limit what can be done in Enterprise or Education. Group Policies etc.
