I would say she will have to buy her own subscription, then tie it to that install. Or buy the full Office 2019 Pro Plus (not 365) and use that.

Absolutely no worries, that license is permanent, continuous. That's just a way validity of Office licenses are told. No need to get her a new license.
The most important thing to check is that it says license status is LICENSED (green highlight in screenshot). The days license is valid is only important if license type is GRACE, which means a trial. Mine shows at the moment only 31 days but as I have a subscription product, Office 365 Enterprise E5 plan, it will of course remain valid as long as my O365 subscription, currently until August 2019.
As I said, absolutely no worries. You can check it every now and then, it will fluctuate between 30 and 60 days, never going under 30 days.
Office license validity works in a way that could be compared to network connection lease. Long before it expires, it will be automatically renewed. Checking my network connection lease now it says it's valid only three weeks, but as we both know, it will be renewed automatically. My network connection does not stop working in three weeks.
