You're right, (IMO) W10 Home is junk (I regret replacing W7 Home Premium).
However, there's one way to stop Windows Update in W10 (all versions).
Disconnect the network and use a different OS (W7, W8.1, Linux Distro or Mac) when you need the Internet.
This also has additional benefits:
- Stopping W10 Telemetry
- Greatly increasing the security of your W10 PC

Hey, I never said Windows 10 Home is junk, don`t put words in my mouth. I don`t know anything about the Home version, I only install Pro. :)
And be more careful how you talk about Windows 10 around here, you may get yelled at for expressing your opinion.
If one wants to 'go back' check the MCT/Media Creation Tool from Microsoft, may have older Versions such as 1703, 1607, etc., if they have not reached End of Life like 1507 and 1511.

It`s a good idea to keep an Iso file of each version of W10 :)
That way you can install whatever you want. But you will still have to update. I was fond of the AU and held on to it as long as possible.
But we should try to fix your file history issue, what exactly is the problem ?
A neat trick that allows you to use an older version of Home AND still get all cumulative updates BUT not get upgraded to the next version is to install it in a Virtual Hard Drive. This is because Windows will not do build upgrades of virtual hard drives when natively booted from Host PC.
Of course, I only recommend this whilst the older version is still being maintained. You can still upgrade the VHD though by attaching it to a Hyper-V virtual machine and updating it. in Hyper-V.
With a little bit of effort, you can clone an existing installation into a Virtual Hard Drive, and add a boot entry, then delete existing installation
Unfortunately in your case, you are already on later version, and reverting keeping all data/programs is not possible but if you clean install older version in VHD, it will always remain on that version unless you attach it to a virtual machine.
