I use these products by StarTech and they both work well. I use SSD's for both. Once hooked up you can use what ever
you normally would use to set up a SSD.
    Example: Intel Tool Box.

One is a hot swap and one is external. At the present time I on a hot swap SSD with W-10 dual boot with W-7.

This is the first cloning hardware I use. A Vantec USB 3.0 dock (around $50).

Would this work transferring data (everything) from my desktop HD to a new SSD drive as the desktop is getting old(like me)?
Is there a simpler way to do this?

If you are referring to the hard drive dock, YES. And that is the main purpose of the dock. For backing up and transferring data to another drive.

Desktop came with Vista (OEM) and was upgraded to 7 Home Edition.
Would I transfer to whole HD or can I transfer just 7?
    Thanks for you input.
