I can see on the MSI support page that my Z97 GAMING 5 supports a GTX Titan but I don't see support for the GTX 1080. Isn't the TITAN more powerful than the 1080? If that's the case then lack of support for the 1080 wouldn't make sense. I would hate to purchase a card that my mobo won't even support.
They probably didn't update the page, and yes your motherboard is compatible with the GTX 1000 series.

The Z97 GAMING 5 has PCI-E X16 Gen 3 slots. That's as compatible as you can get with a 1080.

The original Titan was a 700 series card, from early 2013. It was rated at 250W. The Titan Z was a dual GPU card (essentially a one-slot SLI device.) There were Titan X cards in both the 900 (Maxwell) and 10 (Pascal) series. The series 10 Titan X is rated at 250W. The 1080, 180W.
The main concern would be whether your PSU can support the card. It's much more than adequate. You could use two of them in SLI, no problem.
My PSU should be able to handle it.

Nah. The Pascal Titan X is the monarch. If the 1080ti is released, it'd be more sanely priced, and give the same performance. (I doubt that the extra VRAM on the Titan X is of much use in a single-card setup. Not enough GPU power to drive the resolution that could make use of all that RAM.)
If I have $800+ for a GPU upgrade, I would get the 1080 or 1080TI over Titan because the name " Titan" is already overrated in my opinion. Titan is more worth for professional animation/graphics designer such as movie maker, game designer, etc.....
Unless you're a rich kid, than why not? But if you're someone looking for worth every $$$ than GTX 1080 or 1080TI definitely worth it for gaming.
