Ill try a system restore, will that delete any games that ive installed since my backup point?

If that doesnt work, I suppose Ill order a new cable and adapter...
Thank you so much for your time, I really appreciate it!

    EDIT:
How exactly do you suggest I perform a system restore?

    Control Panel > Recovery

System Restore makes a lot of Restore points. You'll have to see what dates they were made.
I believe there is one made before a Windows Update... which would have been Tuesday.

I and most of the people on here use backup software, rather than System Restore.
    Namely, Macrium Reflect

    But if this is true...

I had taken the second monitors video cable and plugged it into the third monitor and it worked fine
Taking the 3rd monitors video cable and switching it to the second working monitor, and produced the same error.

...then the problem is the cable/adapter.

I do believe you are right sir, maybe it just had enough life left for a day. I performed the restore, with no success, so Im ordering new cables now. Thanks again for all of your help, if I run into the same issue, with new cables and adapters, can I DM you for help? Just to make things easier ya know? Vs trying to explain everything we've done up to this point...

As I understand the problem. You have two identical ACER monitors. They are both hooked to your 2070 Super.
You swapped the cables running to the two ACER monitors, and the problem followed the cable.

If, when switching the cables, you just switched them on the monitor end... then there's a chance that one of the connectors on the vid card is bad.
That would be w/e connector is the one hooked to the cable going to the monitor with the problem.

I hope its just the cables, I have a year old setup, no reason for the video card to have problems......

Sometimes...just disconnecting and re-connecting cables is enough to damage the connector on the cable or the device.
