I am getting is this problem too! , I had installed windows 10 fall creators update a week ago, everything was working fine but then suddenly one day, Cortana search bar turned white (no updates, nothing new installed but still I got this problem), I have figured a workaround though: Change your default app mode from light to dark (settings>personalisation>colors> under more options then the search bar will change to its original color. I still like to use the settings app in light, can't find a permanent fix :/

Tried the region change aswell, seemed to work but first search makes it white again.

This happened a year ago on this system, only fix was a restore to a past image.

What do you mean by "Change your default app mode".

    Thanks.

I meant "Choose your default app mode", which you can find at the bottom of the page. This should fix the problem.

I'm going to give this a try. In your screen shot you had transparency on but I left it off. It's strange that if the registry setting changes noted below are supposed to control the color of the search field then it's odd that the field for me kept changing from gray to white even though the registry changes were remaining the same. I could run the bat file again and it would revert back from white to gray but apparently, there's something else going on that is affecting the background color that's in conflict with these settings that we just have not identified yet. Hopefully Microsoft will figure this out for us.

At first I could not get to the screen you showed. To help others, with the desktop showing and no apps running, I pressed Settings (Press Win key then Settings). Cortana/Search field color changing from default gray to white-image.png In the field "Find a setting" I typed "transparency". (The logic here is that your screen image showed Transparency as an option so I searched for that, to get to your screen). At the bottom is "Choose your default app mode". I changed the radio button to Dark.

This resulted is the background of the Type here to search field returning to is previous dark grey. It has survived several searches and one shutdown and restart.

I really hate that white version of Type here to search. It dominates the screen. Lets hope it sticks.

Actually, I had mentioned where you can find this page in my previous post (settings>personalization>colors>under more options). Nevermind, this fix is working fine, the color won't change back to white again but again I like to use the settings app in the light mode so I am waiting for windows team to permanently fix this in the next update. :)

Basically you want to change the light mode Cortana settings to dark mode in your registry.
    HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Search\Flighting\0
    HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Search\Flighting\1
Go to both of those, wherever you see something that says TextLight and then another key that says TextLightInDarkMode, change the value of TextLight to the value of TextLightInDarkMode. Do this for all instances where there is a InDarkMode option for both of the above keys I copied. Then, BEFORE closing regedit, open task manager, select windows explorer, then restart windows explorer. Cortana should be fixed, but I don't know how aggressive Windows is resetting the registry to how they want it.
