From what I have read on here, desktop/non touch only have new Start Menu, touch devices have the option of either
What I'm hoping for is that W10 will eventually boot to the Start Screen on non touch screen devices as well. It may be the deciding factor on whether I buy W10 when the finished product comes out.

That's what I would like also

I have a feeling that the start screen will be no more soon after looking at the pictures of continuum

Mouse/Keyboard users have the start menu that is there now
Touch user have similar but it just expands to fill the desktop

So you just get a big or a small start menu

Hope I am wrong, but that is the impression I am getting

It certainly works on 9879 and is per user so if some people using your PC prefer one and some the other there is no need for any strife :)
